YIELDS: 18 Servings

1 cup = 82 calories

Protein: 7.2g      Carbohydrates: 11g       Fats: 0.5g

 

INGREDIENTS:

• Corn – no salt added | 1 can
• Refried Beans – no fat | 2 cans
• Boneless Skinless Chicken Breast – pre cooked & shredded | 1 pound
• Chicken Broth | 4 cups
• Chicken Broth – low sodium | 4 cups
• Original Rotel | 3 cans

 

 

INSTRUCTIONS:

1. Mix both Rotel and chicken broth in a large pot
2. Add refried beans and corn
3. Bring to boil, simmer for 5 minutes
4. Add chicken, simmer for 5 minutes
5. Serve and ENJOY!
Pro Tip: To save time, purchase a rotisserie chicken rather than shredding or check your local Costco for prepared off-the-bone rotisserie chicken.
